Carrot Radiatori

with bell peppers & sun- dried tomatoes


- 150g VeggiHap Carrot Radiatori
-4 garlic cloves chopped
-Sun-dried tomatoes
- 1 cup red & yellow bell pepper
- 1 shallots chopped
-1 tbs butter
- Black pepper to taste
- Red chilli flakes to taste
-Fresh basil


Heat the olive oil & butter over medium-high heat
Add garlic, shallots and sauté until fragrant
Add in bell peppers, and season with salt
Add in diced sun-dried tomatoes and season with black pepper and chilli flakes to taste
Bring a pot of water to a boil and cook pasta for 5-6 min
Drain the pasta and add it back to the skillet with sun-dried tomatoes
*keep some pasta water to add if needed
Top off with fresh basil. Serve and enjoy!
