Matooke Cavatappi

With green peas & vegan parmesan


- 150g VeggiHap Matooke Cavatappi
- 200g fresh green peas
- 4 cloves garlic, chopped  
- 1 shallot chopped
- 1/4 tsp red chilli flakes
- kosher salt & pepper
- 1/3 cup grated vegan parmesan (used Willicroft vegan parmesan cheese)
- 1 lemon zested & juiced 


Heat the butter with olive oil & sea salt in a large skillet over medium-high heat
Add garlic, shallots and red pepper flakes & sauté 
Add green peas & sauté for 1 min. Add salt and pepper
Reduce heat, add cheese, lemon juice and zest
Bring a pot of water to a boil and cook pasta for 5-6 min
Drain the pasta and add it back to the pot to the skillet with the green peas
Taste and adjust seasoning if needed. Serve and enjoy!
