Spinach Campanelle

in Cauliflower Alfredo


- 150g VeggiHap Spinach Campanelle
- 1/2 Head Cauliflower (steamed & creamed)
- 6 cloves garlic, chopped & pressed
- 1 red onion
- 2 tbs olive oil
- red pepper flakes (optional)
- parsely
- parmesan (optional)


Steam the cauliflower florets until fork tender
Sauté red onion & garlic over medium heat until tender and fragrant
Bring a pot of water to a boil and cook the pasta
In the pasta water, steam the cauliflower
Drain the caulifower and add it to a food processor with the onion, garlic. Process until smooth.
Drain the pasta and add it back to the pot
Mix in the cauliflower cream sauce
Top with parmesan cheese and chopped fresh parsley or basil. Serve and enjoy!
